Sweet Potato Pumpkin Salad

Sweet Potato Pumpkin Salad Recipe

This delicious salad is the perfect salad for Christmas. It’s one of my families favourites. I am yet to meet anyone who doesn’t like it. It is also super easy to make! Happy Cooking!!

Ingredients

2 large               Sweet potatoes peeled & cubed

1/2                     Pumpkin cubed in large pieces

1                          Avocado cubed

1/2 cup              Roasted pine nuts

1x 150 grams    Baby spinach leaves

1                          Red onion sliced

Honey Mustard Dressing

1 Tbsp                Maple syrup or agave nectar or honey

1  1/2 Tbsp        Seeded mustard

2  to 3 Tbsp      Balsamic vinegar

Method:

Pre heat the oven to 150 degrees Celsius.

Peel and cut the sweet potato and pumpkin into chunky cubes don’t cut them too small or 

they will shrink too much in the oven.

Bake on lined baking trays for approximately 30 minutes then allow to cool on the tray. 

Roast the pine nuts in the oven for only about 5 minutes until browned and set aside to cool.

Mix the maple syrup, mustard and vinegar in a jar and mix well. Set aside in the fridge before serving.

Arrange the washed spinach leaves on a platter. Top with the pumpkin and sweet potato, avocado cubes,

onions and roasted pine nuts.

Dress the salad just before serving.
