Almond Milk is one of the easiest things to make. It has a very high nutritional value and, unlike cow’s milk, is safe for those who are lactose intolerant or have gluten and casein allergies. Almond Milk is also high in a number of vitamins and minerals, including vitamin E, manganese, magnesium, phosphorous, potassium, selenium, iron, fiber, zinc and calcium.
–1 cup of raw almonds (soaked)
–1 teaspoon of Vanilla essence or 1 whole vanilla pod
–1 tablespoon of raw honey or 2-3 dates pitted
– 4 cups of filtered water
1. Soak 1 cup of raw almonds in water overnight or for about 8 hours to germinate the almonds. Rinse 2 to 3 times before use.
2. Blend all the ingredients until smooth in a high power blender
3. Using a nut milk bag or a pair of tights pour the mixture in the bag and squeeze out the milk to strain the almond pulp over a large glass bowl.
4. Store in an air tight glass bottle in the fridge.
The Almond Milk will last for 3 days in the fridge. Be sure to shake it well before use.
Almond milk is a great alternative to regular cows milk. You can use it as a replacement when milk is needed in any recipe.
